So I've been getting this box of organic veggies and fruit once every other week. I asked them to please stop sending potatoes, since they are generally not my favorite vegetable.
Last week, I got a lovely eggplant (aubergine, to you brits). I'm not always a bit fan of eggplant, either. Let me revise that: I'm not a big fan of cooking eggplant. Tonight, coming home, I knew that I really did need to cook it, or it would be inedible soon. I didn't want to fry it. I didn't have onions to bake it and make a nice spread/dip. I had no breadcrumbs or parmesan for that parmesan dish. So, I improvised and here's what I got:
This is baked eggplant with a cornmeal crust, served with lemon bulgar with green peppers, olives and pinenuts. And it's an original Spins dish.
Despite the fact that it could have done with a bit more seasoning (although the cayenne in the cornmeal crust had a nice zing!), I really liked it. I think that my seasoning problem could have been solved by cooking the bulgar with broth instead of just water...and I think a nice hot sauce might have given it a good kick too. Overall, the flavors all went well together. Sort of a nutty flavor.
What else is on my mind? Not much really. I have to go talk to some people about the upcoming work on the building where I do my therapy work. It's got me a bit worried because I have been working on marketing and materials to build my practice, and now I may lose a stable work environment over the summer. That sucks!
But, in general, I'm feeling good. And, next week, I have the 4th off...I love holidays.

MMMHH! I love eggplant, and your rendition looks delightful! I have done many an eggplant parmigianna, but that does involve some frying. And loads of cheese!
I love the blue plate too. Makes it so stylish! Like a five star restaurant.
